Swiss Chard saute with Parmesan

This recipe is ideal as an accompaniment to all meats, fish & pie's, you can also add mushrooms to it. 

Serves 4:   Prep 15 mins:  cook 10 mins: ready 25 mins


30g Butter

2 tbls Olive oil

1 tbls Finely chopped Garlic

½ Small Red Onion diced

1 Bunch Chard, stems & leaves chopped coarsely

and kept separate

125ml Dry white Wine

 1 tbls Fresh lemon juice to taste

2 tbls Freshly grated Parmesan

Salt to taste

1/Melt butter and olive oil together in a large frying pan over medium-high heat.

2/Stir in the garlic and onion and cook for 30 seconds until fragrant.

3/Add the chard stems and the white wine. Simmer until the stems begin to soften, about 5 minutes.

4/Stir in the chard leaves and cook until wilted.

5/Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed.
