Ingredients
5 tbsp Cider Vinegar
2 tbsl Rapeseed Oil
A little drizzle Local Honey
3-4 Apples, cored & thinly sliced
1 small Cauliflower (cut into small florets)
200g Crumbly Blue Cheese, crumbled (eg: Mrs Temple's Binham Blue)
Small bunch Mint Leaves
50g Sunflower seeds ( walnuts or cob nuts work well too)
Method
1/ Make the dressing by whisking the vinegar, olive or rapeseed oil and honey with some seasoning. Pour over the sliced apple then gently mix in the cauliflower, alfalfa sprouts and cheese. Scatter over the mint and the toasted seeds before serving.
