Green Olive Grain Salad

Serves 8:- Prep time 15 mins


280g Cooked Grains (eg a mix of bulgur & quinoa)

30g Curley Parsley, finely chopped and thicker parts of the stems removed

10 Mint leaves, finely chopped

135g Green Olives, sliced

2 Spring Onions, finely sliced

Juice of 1 Lemon

3 tbsp Rapeseed Oil


1/Add the grains, parsley, mint, onions, olives to a bowl and mix to combine.

2/Squeeze the lemon juice over the salad, drizzle the rapeseed oil in, and toss to combine. Add salt and pepper if desired ( you don't have to use it, taste first.)
