Lemon and Garlic Trout Parcels with Asparagus

Serves 2: Total time 30 mins


200g Asparagus

2 Skinless Trout Fillets about 140g each

4 tsp Softened Butter

1 Clove Garlic, crushed

1 Lemon, zested & juiced

2 tbsp Parsley, finely chopped


Lay a two pieces of baking parchment over a 2 pieces of foil on the worksurface, split the asparagus stems in half and add one half onto each, in one layer, to the middle. Put a trout fillet on top of each and season. Mash the butter with the garlic, lemon zest, parsley and seasoning. Spoon half the mixture onto each of the fish, add a slice of lemon and a squeeze of juice to both, and wrap the parcels up tightly. Put in a steamer basket, and steam for 15-20 minutes, until the fish is cooked through. Serve with more lemon squeezed over, if you like.
