Zesty Sprout Tops

1 Sprout Top

1 Garlic Clove

Zest of 1 Lemon

Juice of half a Lemon

Salt and Pepper

Rapeseed Oil


1/ Peel the leaves off the sprout top and slice them all down the middle. Finely slice a piece of garlic, into tiny matchsticks

2/ Heat a tbsp rapeseed oil over a medium heat and fry the garlic for 1 minute (be careful not to burn it). Then add the greens and fry for 3-4 minutes until starting to soften. Pop a lid on the frying pan for a couple of minutes to help the softening process.

3/ Then remove from the heat, add seasoning and the lemon zest and juice. Serve with whatever you fancy
